Gluten Free/Dairy Free Oatmeal Chocolate Chip Cookies
1 cup + 2 Tablespoons (gluten Free flour I used Jules)
1/2 teaspoon salt
3/4 teaspoon baking soda
1/2 cup butter (I used earth balance)
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/2 teaspoons vanilla
1 1/2 cups gluten free quick oats
1 1/2 cups chocolate chips
Cream together butter, sugar, brown sugar, add egg and vanilla and beat until fluffy.
Add flour, oatmeal, salt and soda when well combined add oatmeal. This is where I
add chocolate chips. bake at 350 for 8-10 minutes.
*NOTE* REFRIGERATE batter for at least two hours or more. This cookie is on the
thinner side.
