Gluten Free Carrot Cake

This gluten free carrot cake is moist and flavorful, so often times I have had a very dry cake, NOT this one. I love the carrot shreds in this cake, very attractive and tasty.
Prep time: 10 minutes
Cook time: 30-35 minutes
Total time: 45 minutes
Ingredients
  • 2 1/2 cups shredded carrots
  • 2 cups sugar
  • 2 cups gluten free flour (Jules)
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder (gluten free)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup oil
  • 4 eggs (or egg replacer)
  • 1/2 cup dairy free butter (earth balance)
  • 1 teaspoon vanilla
  • 3 cups confectioners sugar
  • 1/3 cup So Delicious Unsweetened Coconut Milk
Cooking Directions
  1. Preheat oven to 350 F
  2. Combine eggs and sugar beat until light in color, slowly add oil, baking soda, baking powder, salt and flour, and carrots, mix until blended. Pour all ingredients unto a greased 9x13 pan. Bake for 30-35 minutes or until a tooth pick comes clean.
  3. Frosting: Combine 1/2 cup dairy free butter, vanilla, confectioners sugar, coconut milk. Beat until silky and smooth.
