Gluten-free Hearty Meatloaf
My husband and I were over at a friend's house for dinner a few weeks ago and she made a meatloaf for us that was delicious. Thank you Alauna for the inspiration of this recipe! As I was eating I was thinking to myself, this has an interesting blend of spices in it, I wonder what she used. When I asked her and she told me a taco seasoning I was very surprised as I would have never thought to use taco seasoning's before in a meat loaf.
Prep time: 10 minutes
Cook time: 60-70 minutes
Total time: 1 in a half hours
Ingredients
- 2 pounds Ground Beef
- 2 Whole Eggs
- 2/3 cups Certified Gluten-free Oatmeal
- 1/2 cup Onion Diced
- 1 Packet Taco Seasoning
- 1 cup Barbecue Sauce
Cooking Directions
- Preheat oven to 350 degrees F
- Place all ingredients into a bowl and combine just until mixed, careful not to over mix, if you feel your mixture is to dry add more barbecue sauce to get the consistency that you desire. Place mixture into a 9x13 pan and cover with tin foil, bake 60 min or until no longer pink in the middle. *NOTE* just before meatloaf is done take out of oven and spread additional barbecue sauce over the top, place back in oven without tin foil.
