Gluten-free Df Corn Bread
What do I say about this gluten-free dairy-free corn bread. I'm here to tell you that it is fabulous, slightly sweet and spongey. My family loves cornbread with any meal but especially with home made chili. I even mention chili and everyone asks, "is there going to be corn bread". We lather it with honey and butter, sheer deliciousness!!

Ingredients
- 1 2/3 Cups So Delicious Coconut Milk Unsweetened
- 2/3 Cups Butter Softened (DF Earth Balance)
- 3 Whole Eggs
- 1 Cup Sugar
- 2 1/3 Cups All Purpose Gluten-free Flour(Jules)
- 1 Cup Cornmeal
- 4 1/2 Teaspoons Baking Powder
- 1 Teaspoon Salt
- Preheat oven to 350 degrees
- In a medium sized bowl add, sugar and softened butter, cream together
- Add eggs, cornmeal, salt, gf flour, baking powder, and coconut milk
- Mix until thoroughly combined
- pour mixture into a greased 9x13 pan and bake for 28-35 minutes or until toothpick comes clean.
