Gluten-free Pumpkin Bread

This is my most favorite time of the year to bake, the weather is just starting to turn colder, leaves are changing, and the days are getting grayer. I find that I like to light some candles put on some soothing music and bake. The smell of fall is in the air and especially in my kitchen where I have been using many types of spices for my Gluten-free Pumpkin Bread. This is a true favorite in our home. Perfect for a snack, dessert, lunches, or just because you feel like it. I find nothing better than getting a sugar pumpkin at our local farmers market coming home seeding it, washing the seeds, and roasting the pumpkin for the best tasting pumpkin puree in town.





Prep time: 15 Minutes

Cook time: 45-55 Minutes

Total time: 1 Hour 10 Minutes

Yield: Two loaves

Ingredients
  • 2 cups White Sugar
  • 4 Whole Eggs
  • 1 cup Vegetable Oil
  • 2/3 cup Unsweetened Apple Sauce
  • 1 3/4 cups Pumpkin Puree (Fresh or Canned)
  • 2 teaspoons Vanilla
  • 2 teaspoons Baking Powder
  • 2 teaspoons  Baking Soda
  • 1 teaspoon Sea Salt
  • 3 1/2 cups All Purpose Gluten-free Flour (Jules)
  • 1 tablespoon Cinnamon
  • 1/4 teaspoon Cloves
  • 1/4 teaspoon Ginger
Cooking Directions
  1. Preheat your oven to 350 degrees F
  2. Grease two standard sized loaf pans
  3. In a stand mixer add sugar and eggs, beat until light in color, slowly add the oil beat until mixture is incorporated
  4. Add apple sauce, pumpkin puree, and vanilla, scrape around the edges of your bowl to make sure all ingredients are fully mixed in
  5. Add baking powder, baking soda, sea salt, gf flour, cinnamon, cloves and ginger
  6. Beat for two minutes and pour mixture evenly into your loaf pans
  7. Bake for 45-55 minutes or until a toothpick is inserted and comes out clean

    1. I'm sure you could make this egg free with an egg substitute, I would just add more applesauce with some Ener-G.

  3. Hi :) I Justa wanted to know if for the ginger part do I use a piece of it or do they sell it in powder form?? Thanks a lot!
