Skagit Valley Herald Feature/Rachelle Himmelman

Baker Discovers World Without Gluten:

I had so much fun doing this interview with the Skagit Valley Herald.  I love cooking and baking and when I was diagnosed with Celiac I was in such an utter loss of what to do, after countless hours of research and learning how to gluten free bake I have finally found my niche.  I have discovered this niche through trial and error and realized I just couldn't give up although there was times I really did want to give up.  I find it very important to tell people that you need to keep plugging away until you find that happy place for yourself.

I really hope to publish a cookbook one day for everyone to enjoy!

Gluten Free Double Chocolate Toffee Chip Cookies

Who doesn't love chocolate? I love chocolate my family loves chocolate, I mean everyone loves chocolate ok good now that we have that established lol. I was thinking the other day about how much much my husband loves chocolate and knowing that he was needing some goodies for his lunch I thought these Gluten Free Chocolate Toffee Chip Cookies would be just the perfect thing for him and the kids.  So I got myself to thinking about just how chocolately I wanted to get and that is when I came up with this perfect blend of cocoa, chocolate chips, and toffee and if that wasn't enough a little white chocolate
to make things a little more tasty.

I think this is the perfect cookie that will satisfy that over whelming chocolate
craving here on out, with a tall glass of milk or a bowl of ice
cream I think this Gluten Free Double Chocolate Toffee Chip Cookies
are amazingly good.

Gluten Free Products In My Pantry

I have been asked numerous times what I keep on hand in my pantry for gluten free products.

I have started a list of my most important things that I must have to bake gluten free as there is so many amazing products out there nowadays for gluten free cooking and baking as it is so hard to choose what is the best thing to use, I have been through enough gluten free products to even count with some good and others not so much.  I love trying new things as well I never stick to the same ole thing unless I'm making something for a dinner and I know the product is a for sure thing.  I ALWAYS try new products at home and the family tests them, sometimes they say "Wow mom that was great, or ewwwwww gross".

The products I use are what I have chosen that works best for my family as you might try something and not like it so much.  I would love to have your input to some of the gluten free products that you use I think it would be so much fun to see what kind of products that are offered all over the globe.
