 Gluten Free/Dairy Free Coconut Cookies Dipped In Chocolate



Gluten Free/Dairy Free Coconut Cookies Dipped In Chocolate

1 3/4 cups All Purpose Gluten free Flour 
1 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/2 cup butter (I used earth balance)
1/2 cup packed brown sugar
1/2 teaspoon vanilla
1/2 almond extract
1/2 cup white sugar
1 1/3 cups flaked coconut


1 cup chocolate
1 tablespoon oil (I used vegetable oil)

Preheat oven to 350 degrees F, In a medium bowl or stand mixer cream butter, white sugar, brown sugar, and eggs until light and fluffy, gradually blend in the flour, soda, and salt, when mixed add coconut. REFRIGERATE for at least two hours.   I used a small cookie scooper to line 12 balls on a cookie sheet lined with parchment paper.  Bake 8-10 minutes.  Cool

Melt chocolate and oil in microwave until just melted, dip bottom of cookies in chocolate and line on parchment paper, I put cookies in freezer for about 10 min to set chocolate.
