
Gluten-free Banana Bread
This is my most favorite time of the year to bake, the weather is just starting to turn colder, leaves are
changing, and the days are getting grayer. I find that I like to light some candles put on some soothing
music and bake and the smell of fall is in the air.
My husband LOVES banana bread and has been
hinting for weeks that he would sure like some, so I gave into his hints yesterday and made him two
beautiful loaves of Gluten-free Banana Bread for him to snack on. I have a hard time keeping anything
like this around especially with the kids and him fighting for every last crumb. This bread not only
tastes fabulous but freezes beautifully.
Cook time: 45-55 Minutes
Total time: 1 Hour 10 Minutes
Yield: Two loaves
Ingredients
- 2 cups White Sugar
- 4 Whole Eggs
- 1/2 cup Shortening (earth balance)
- 1/2 cup Vegetable Oil
- 2/3 cup Unsweetened Apple Sauce
- 1 3/4 cups Banana's (4-5 mashed)
- 2 teaspoons Vanilla
- 2 teaspoons Baking Powder
- 2 teaspoons Baking Soda
- 1 teaspoon Sea Salt
- 3 1/2 cups All Purpose Gluten-free Flour (Jules)
- Preheat your oven to 350 degrees F
- Grease two standard sized loaf pans
- In a stand mixer add sugar, shortening, add eggs one at a time, beat until light in color, slowly add the oil beat until mixture is incorporated
- Add apple sauce, mashed banana's, and vanilla, scrape around the edges of your bowl to make sure all ingredients are fully mixed in
- Add baking powder, baking soda, sea salt, gf flour
- Beat for two minutes and pour mixture evenly into your loaf pans
- Bake for 45-55 minutes or until a toothpick is inserted and comes out clean
