Gluten-free Peanut Butter Chocolate Bars

My goodness if you have a craving for peanut butter and chocolate look no further, these bars will satisfy all those cravings. A peanut butter brownie with a chocolate frosting, yummy!!
Prep time: 15 Minutes
Cook time: 25 Minutes
Total time: 40 Minutes
Ingredients
  • 1 3/4 Cups Creamy Peanut Butter
  • 1/3 Cup Butter (I used earth balance dairy free)
  • 1 Cup Brown Sugar (packed)
  • 3/4 Cup Sugar
  • 2 Whole Eggs
  • 1/2 Cup Unsweetened Applesauce
  • 1 Teaspoon Vanilla
  • 2 Cups Gluten-free Flour (Jules)
  • 2 Cups Certified Gluten-free Quick Oats
  • 1 Teaspoon Baking Soda
  • FROSTING:
  • 3 Cups Confectioners Sugar
  • 1/3 Cup Coconut Milk
  • 1/4 Cup Cocoa
  • 1/4 Cup Butter (I used earth balance dairy free)
  • 1 Teaspoon Vanilla
  • 1/2 Teaspoon Salt
Cooking Directions
  1. Preheat oven to 350 degrees.
  2. In a stand mixer add peanut butter, butter, brown sugar, sugar, and eggs beat until light and fluffy, slowly add vanilla, baking soda, applesauce, quick oats and gluten-free flour. Batter will be thick, line a 9x13 pan with parchment paper and spread dough evenly in pan.
  3. Bake for 25-30 or until lightly browned or toothpick comes out clean. Let cool completely.
  4. Frosting: Combine confectioners sugar, cocoa, butter, vanilla, salt, coconut milk beat until light and fluffy, a whipped texture, spread evenly over bars.
