Gluten free Chocolate Chip Cookies

I mean honestly who doesn't love the classic chocolate chip cookie, I sure do.  I have always loved this cookie dough minus the chocolate chips too.  When I was diagnosed with Celiac I surely thought that all of my sweet eating days were over.  I mean I cannot stress this feeling enough that my whole life was over now, hahahaha, well not really but I thought so at the time.  I had no idea what gluten free was, wheat free hmmm what do I do now? After many months of research I had found what works for my family and I. There is many all purpose gluten free flours available on the market today that you use cup for cup, with all the sensitivities nowadays there is something out there for everyone.

Ingredients:
  • 1 Cup Butter (I Used Earth Balance, Dairy Free)
  • 3/4 Cup Brown Sugar (Firmly Packed)
  • 3/4 Cup Organic Sugar
  • 2 Whole Eggs (Room Temperature)
  • 1 Teaspoon Pure Vanilla Extract
  • 1 Teaspoon Baking Soda
  • 3/4 Teaspoon Sea Salt
  • 2-1/2 Cups All Purpose Gluten-free Flour (I used Jules)
  • 2 Cups Chocolate Chips (I Used Dairy Free)
Cooking Directions:
  1. In a stand mixer cream together softened butter, brown sugar, and organic sugar.
  2. Scrape the sides of the bowl.
  3. Add eggs one at a time and cream for 2 minutes, or until mixture is fluffy and light in color.
  4. Scrape the sides of the bowl.
  5. Place vanilla, sea salt, and baking soda in the bowl and combine.
  6. Very slowly add all purpose gluten free flour.
  7. Scrape the sides of the bowl.
  8. Add chocolate chips to the bowl and mix just to combine.
  9. Refrigerate mixture for at least three hours, tho also helps with cookies not spreading out when baking.
  10. Preheat oven at 350 degrees F.
  11. Bake for 11 minutes or until golden brown.
  12. Enjoy.
