Gluten free Oatmeal Chocolate Chip Cookies
My husband has been raving about these cookies for days now, he tells me that these cookies taste exactly how his great grandmother used to make them for him (awesome compliment to me) and they are gluten free. My family always seems so surprised when I make something gluten free that they used to have that contained wheat or gluten. "Mom how do you make this taste so darn good gluten free?" Wether I'm at the grocery store, out to dinner or just chit chatting with friends I tell people that gluten free food tastes just as good if not better than foods that contain wheat or gluten. I'm not quite sure why people have it in my mind that all gluten free food tastes like card board. :)

Ingredients:
- 1 Cup Butter (I Used Earth Balance, Dairy Free)
- 1 Cup Firmly Packed Brown Sugar
- 1/2 Cup Sugar
- 2 Whole Eggs (Room Temperature)
- 1 Teaspoon Pure Vanilla Extract
- 1 Teaspoon Baking Soda
- 1 Teaspoon Cinnamon
- 1-1/2 Cups Gluten-free All Purpose Flour
- 3 Cups Gluten free Quick or Old Fashioned Oats
- In a stand mixer or a large bowl place softened butter, brown sugar, and white sugar.
- Mix just until ingredients come together.
- Add room temperature eggs and mix until ingredients are light fluffy and pale in color.
- Scrape the sides of the bowl.
- Add vanilla, cinnamon baking soda, and gf flour.
- Scrape the sides of the bowl and add gf oats.
- Place mixture in the refrigerator for at least 2-3 hours.
- Preheat oven to 350 degrees F.
- Line a cookie sheet with a silpat or parchment paper to prevent sticking.
- Using a small cookie scoop place 12 uniform cookie dough balls on cookie sheet.
- Bake for 11 minutes.
- **NOTE** When cookies are done baking let cool for a few minutes on cookie sheet before removing to a wired rack.
