Gluten Free Tri Berry Cobbler

This time of the year always gets me in the mood for a cobbler wether it's just one type of berries or multiple, I find this cobbler is great for a quick go to dessert.  My family gets invited to potlucks and this gluten free cobbler is my signature dish.  My husband will come home from work and will ask if I have made any desserts during the day, what he is really asking is "honey have you made a cobbler today?"  We used to go camping quite frequently and I would have a whole cooking day prior to camping and make lots of salads and easy things to pack for camping and my easy go to cobbler tastes even better when sitting around a camp fire.  This most certainly is a family favorite and I hope you enjoy this gluten free cobbler as much as we do.

Ingredients:
  • FOR THE FILLING:
  • 4 Cups Berries (2 Cups Blackberries 1 Cup Strawberries 1 Cup Blueberries)
  • 2 Tablespoons All Purpose Gluten-free flour 
  • 1/2 Cup Sugar
  •  FOR THE TOPPING
  • 1 Cup All Purpose Gluten-free Flour 
  • 1 Cup Sugar
  • 1 Teaspoon Baking Powder
  • 1 Whole Egg
  • 1/2 Cup Melted Butter (Or Butter of Choice)
Cooking Directions
  1. Preheat oven to 375 degrees F.
  2. In a medium sized bowl place berries, sugar and gf flour.
  3. Combine ingredients until they are coated evenly and no powder remains in the bowl.
  4. Set filling aside.
  5. FOR THE TOPPING:
  6. In a small bowl add gf flour, sugar, and baking powder.
  7. Stir together.
  8. Create a well in the middle of the flour mixture and add egg.
  9. Stir mixture until it resembles small crumbs. 
  10. Place berry mixture in an ungreased 11x7x1.5 inch pan.
  11. Spread berry mixture evenly in the pan.
  12. Place flour mixture on top of berry mixture spreading evenly.
  13. Drizzle melted butter on top of crumb topping.
  14. Bake for 45-50 minutes or until topping is golden brown.
  15. Enjoy
