Gluten-free Angel Food Cake with Blueberry-Strawberry Sauce

Omigosh what do I say about this cake other than it's light and fluffy, I had no idea I could indulge in gluten-free angel food cake again. The sauce gives this cakes an added richness that will leave you wanting more.
Prep time: 15 minutes
Cook time: 45-50 minutes
Total time: 1 hour plus cooling time
Ingredients
  • FOR THE CAKE
  • 12 Whole Eggs At Room Temperature
  • 3/4 cups plus 1/2 cup Sugar Divided
  • 1/4 cup Cornstarch
  • 1/4 cup White Rice Flour
  • 1/4 cup Tapioca Flour
  • 1/4 cup Potato Starch
  • 1 1/2 teaspoons Cream of Tarter
  • 3/4 teaspoons salt
  • 3/4 teaspoons Vanilla Extract
  • 1/2 teaspoon Almond Extract
  • Blueberry-Strawberry Sauce:
  • 1 cup Fresh or Frozen Blueberries
  • 1 cup Fresh Strawberries
  • 1 Whole Lemon Juiced
  • 3/4 cups Sugar
  • 1/2 cup Cold Water (divided)
  • 3 tablespoons Cornstarch
  • 1/2 teaspoon Almond Extract
  • 2 tablespoons Powdered Strawberry Jello
Cooking Directions
  1. FOR THE CAKE:
  2. Preheat oven to 350 and remove all racks to place cake on the lowest rack of oven.
  3. Sift 3/4 cups sugar, cornstarch, white rice flour, potato starch, tapioca flour, and salt into a small bowl and set aside.
  4. In a stand mixer combine egg whites, cream of tarter, extracts, and the remaining 1/2 cup sugar(add sugar very gradual until all sugar is added and stiff peaks form)remove from stand mixer and very carefully fold in flour mixture into egg whites taking great care not to deflate egg whites, when combine place mixture in an ungreased angel food pan and bake for 35-40 minutes, when the cake is done take out of oven and immediately invert pan, COOL COMPLETELY.
  5. FOR THE SAUCE: Combine berries, 1/4 cup water, lemon juice, sugar, strawberry jello, almond extract. In a small bowl combine remaining 1/4 cup water and corn starch until dissolved and add to berry mixture. Cook on medium to high heat until mixture is thickened. Remove from heat and cool. Enjoy!
