Gluten Free/Dairy Free Blueberry Muffins




























Gluten Free/Dairy Free Blueberry Muffins

1 1/2 cups gluten free flour (I used Jules)
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
milk (I used so coconut milk unsweetened)
1 cup blueberries

preheat oven to 375 degrees F, Combine flour, sugar, salt and baking powder, in a glass
1 cup measuring cup add oil, egg, add enough milk to measure exactly one cup, combine this with
first set of ingredients mix thoroughly, add blueberries.  Fill muffin cups almost to the top and sprinkle with topping.  Cook until center comes clean with a toothpick 18-20 min depending on your
oven.  

Topping:
1/2 cup brown sugar
1/2 cup gluten free flour of choice (I used Jules)
1/4 cup very cold firm butter(I used earth balance)

Combine all ingredients with pastry cutter or two knives.
