Gluten Free/Dairy Free Chocolatey Cake

This chocolate cake is heavenly, very moist and decadent. Perfect for any occasion, a double chocolate sensation.

Prep time: 10 minutes

Cook time: 22-25 minutes

Total time: 45 minutes

Ingredients
  • 2 cups sugar
  • 3/4 cups gf cocoa powder
  • 1 1/2 teaspoons baking powder gf
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs (or egg replacer)
  • 1 cup So Delicious Dairy Free Unsweetened Coconut Milk
  • 1/2 cup oil
  • 2 teaspoons vanilla
  • 1 cup boiling water boiling water
  • 1 3/4 cups gluten free flour (Jules)
  • FOR THE FROSTING:
  • 1/2 cup dairy free butter dairy free butter (earth balance)
  • 3 cups Confectioners Sugar
  • 2/3 cups gluten free cocoa
  • 1/3 cup coconut milk
  • 1 teaspoon vanilla
Cooking Directions
  1. Preheat oven to 350 degrees, grease three 9 inch pans line with parchment paper
  2. Combine sugar, eggs beat until light in color, add vanilla, oil, milk, salt, cocoa powder, gf flour, baking soda, baking powder, and boiling water mix until incorporated. Pour into pans and bake for 22-25 minutes.
  3. Combine 1/2 cup dairy free butter, gf cocoa powder, confectioners sugar, coconut milk, and vanilla. Frosting will be thick, continue to add coconut milk until desired consistency.

  5. Your recipe omits the amt of confectioner's sugar. I will guess, but thought you might like to add that bit. Looking forward to tasting this.

  6. Oh Gosh, hi AJ, I will have to add the measurements for the confectioners sugar, thank you for letting me know, it is 3 cups by the way for the frosting. I think cupcakes would be absolutely wonderful for this recipe!!
